Abstract

The interest in the researches on enzymes production have been increasing in the last years, due to their catalytic properties higher than the synthetic catalysts, substrates specificity , low cost of the involved reactions and mainly for being natural products, not collaborating for the generation of toxic by-products to the environment. Emphasizing the environmental protection, recently the enzymes have substituted several chemical catalysts in the manufacture of chemical, pharmaceutical and textile products, besides papers, food and agrochemicals. The proteolytic enzymes stand by an important group of enzymes used in the industry, and can be present in plants, animals and microorganisms. Proteases from microbial origin represent an attractive, since the microorganisms require a limited space for culture and are susceptible to genetic manipulation. This work presents some properties and applications of proteases, as well as results of researches related to the utilization of Bacilllus genus bacteria for these enzymes production.
